I have tailored my mums original recipe so that it is paleo, gluten and dairy free, the flour is replaced with nutty alternatives which gives a more dense and flavorful bread.

INGREDIENTS
- 1 cup almond flour
- 1/2 cup chopped walnuts
- 1/4 chopped almonds
- 1 tsp baking soda
- 1 tsp cinnamon
- pinch of coarse sea salt
- 1/3 cup chopped prunes
- 1 tbs honey
- 2 large ripe bananas (mashed)
- 2 eggs beaten
For the topping:
- walnuts
- diced almonds
- chopped almonds
- sun flower seeds
- honey
- sliced banana (four slim pieces)
METHOD
In a medium sized bowl add all the dry ingredients. (almond flour, walnuts, almonds, baking soda, cinnamon & salt)
In a separate bowl add the chopped prunes, honey, banana & eggs. Mix well until everything is well incorporated.
Add the wet ingredients to the dry ingredients and mix thoroughly.
Pour in the batter.
Sprinkle on the toppings evenly.
Add the sliced banana.
Place in oven for 40 minutes and bake until a toothpick comes out clean.
Leave to rest in the tin for 10 minutes, then take the bread out of the tin, leaving the parchment paper on and allow cool completely on a wire rack.
