PALEO, VEGAN, DAIRY FREE, GLUTEN FREE & RAW
This is my take of the Mars Bar. I don't think I have ever met anyone who doesn't like them, they have been deep fat fried, battered and god knows what else, but this time I am stripping them back and making them completely RAW!
INGREDIENTS
1 cup of soaked cashews
pinch of salt
1 tsp date syrup
For the caramel
11 soaked dates
1 tbs coconut oil
1 tbs honey
pinch of salt
For the chocolate covering
200g of 85% dark chocolate.
You only use less than half of this on the actual bar, its just good to get a decent covering.
METHOD
Start soaking the dates by covering them with boiling water. Just let them sit while you prepare the base.
Drain the water from the cashews and put them straight in the blender. Blitz until you get a wet clumpy consistency.
Add the date syrup & salt. Blitz again. The mixture should be like very very damp sand that sticks together well.
In a lined baking tray pat down the sticky mixture in a rectangle shape, making sure that the tops and sides are smooth.
Place in the freezer while you prepare the sweet caramel.
Get the base from the freezer and spread the caramel layer on top, making sure that the sides and top are flat.
Place back in the freezer to harden for an hour.
I began to pour the chocolate over the bars with a spoon but I found that it wasn't spreading around the sides evenly. It is much easier if you use your fingers and get a little messy by dipping it in the chocolate one half at a time.
Leave to harden.
And enjoy with a large cup of tea!
