I think for every kid carnival food is a little more special than our every day treats, whether its that sugary fluffy pink candy floss or a bag full of those colorful puffed up sweets, there is always some sort of magic and excitement when it comes to eating them.
So with summer literally at our doorsteps I have decided to switch off, reminisce on those summer memories and indulge in a piece of that magic.
My caramel apples have everything you'd go searching for at a summer fair, they are slightly salty, a little bit sweet and have a touch of indulgence from the dark chocolate.

INGREDIENTS
2 skewers
2 apples
1/2 cup of dates
pinch of salt
1 tbs honey
1 tbs of water
1/3 cup diced almonds
60g 85% dark chocolate
2 tbs coconut oil
METHOD
To make the caramel sauce.
Soak the dates in boiling water for 5 minutes. Drain the water and add them to a food processor with the salt, honey and water. Blitz until smooth and creamy.
To make the chocolate sauce.
Melt the coconut oil and the dark chocolate together in the microwave in 30 second spurts until it is runny, silky and smooth.
The almonds.
Roughly chop the diced almonds or nut of your choice and spread on a sheet of baking paper ready for sprinkling on top of the caramel.
Grab your sticks and insert them into the bottom the the apple.
Spread the caramel sauce all over the apple using a knife.
Sprinkle the chopped almonds all over the caramel so that the apple is covered.
Drizzle the melted chocolate over the nuts and caramel. If you want more chocolate, dip the top half of the apple into the melted chocolate and leave to harden completely.
Sink down in to your sun lounger in the sun, put your feet up and loose your self in those happy summer memories.
