This recipe is so healthy, and can be made a little more indulgent if you feel like using butter to fry them in. I used spray oil, which is surprisingly only one calorie per spray, ( I find that hard to understand) but anyway they were enjoyed and demolished in minutes! So with out further adieu, here is how you make these perky pancakes.
- 2 bananas (preferably ripe)
- 3 eggs
- A good splash of milk, 40-50mls
- 1 tsp cinnamon
- Squeeze of honey
- Good handful of coarsely shopped walnuts
- Pinch of salt
- 1 square of dark chocolate
- Powdered Sugar
Thankfully this batter is very forgiving and is exactly what you are looking for on a lazy sunday morning, so here are some additions or substitutions that work brilliantly in these beauties. Mix and match with all the ingredients below. Be Bold.
The nut division:
- Pecans
- Almonds
- Cashews
- Peanuts
- Pine nuts
The fruit division:
- Raisins
- Dried Apricots (chopped)
- Dried Cherries
The spice division:
- Cinnamon
- Powdered Ginger (if your feeling like a bit of heat)
- Chili Powder (if your feeling like a little more heat!)
- All spice
- Nutmeg
- Cocoa Powder
- Grab yourself a mixing bowl.
- Peal your two bananas and break them into the bowl.
- Crack three eggs in with the bananas.
- Sprinkle in your cinnamon and salt.
- Squirt in your honey.
- Leave a small amount of the walnuts to drop over your pancakes for when they are ready. Its a nice idea to toast these lightly in a separate pan while your pancakes are cooking. With the remaining walnuts it doesn't matter how big or small they are, it is completely up to your preference, so chop away until your achieve your desired size! Also add these to your bowl.
- And finish off with a splash of full fat, skim or almond milk. (whatever your feeling)
- I like to use a potato masher as I find it is the easiest and quickest way to mash everything together. There is no need to be getting out electric mixers on a Sunday morning.
- When the batter is mixed throughly together, heat your pan on a medium heat.
- Ladle out your pancake batter in what ever size, shape or form you are feeling and flip when holes begin to appear in the centre and the edges look like they have cooked.
- Once flipped leave cook for another 1-2 minutes. In the mean time prepare your toppings.
- For these ones, I heated up 1 square of dark chocolate with a tiny bit of milk in the microwave for 30 seconds and made a quick drizzling sauce.
- Flip your pancakes on to your plate.
- Dust over a generous amount of powdered sugar.
- Drop your chopped walnuts.
- Drizzle your honey.
- Drip your chocolate.
- And Devour!
