So, get jamming!
INGREDIENTS
7 large oranges
1/4 of a lemon
400g of frozen fruits of your choice
(try and choose fruits with high natural pectin levels like blueberries, raspberries, currents, lemons, cherries, oranges)
3 tablespoons of raw natural honey or agave syrup
A dash of rum (optional)
METHOD
Hopefully everyone has a juicer, otherwise this part may be a little tedious. Slice the oranges in half and juice them.
Leave the orange juice to reduce until it is darker in colour(20 minutes). 7 oranges should give you just under 1/3 of a cup of orange syrup, this is going to help the jam set and give added sweetness.
The frozen berries should be broken down and have a thicker consistency(there shouldn't be any red juices in the pan).
Add the orange syrup & honey to the berries and allow to cook for a further 5 minutes. At this stage feel free to add rum or cognac.
To test the jams consistency place a plate in the freezer for about 10 minutes. Take a teaspoon of the jam mixture and spread it on the freezing plate. Put the plate back in the freezer for a further 5 minutes, run your finger through the jam to see if it stays together and is not runny.
Store in your jars and enjoy on bread or dolloped over ice-cream.
This will keep for 7-8 weeks in the fridge.
