- 250g spelt flour
- 1 teaspoon salt
- 1 1/2 teaspoons bicarbonate of soda
- 5 tablespoons unsweetened cocoa powder
- 200g brown sugar
- 2 eggs
- 250g grated courgette
- 120ml vegetable oil
- 1 teaspoon vanilla extract
- 60g chopped brazil nuts
In a large mixing bowl, sift together flour, salt, bicarb, cocoa and sugar. Combine eggs, courgette, oil, and vanilla; blend into dry ingredients. Stir in brazil nuts.
Bakefor 20 minutes in preheated oven.
Cool in the tin, and then cut into squares.
