PALEO, RAW VEGAN, VEGAN, DAIRY FREE, GLUTEN FREE & SUGAR FREE
INGREDIENTS
1 1/2 cup of walnuts (or which ever nut you like, almonds are lovely)
1/2 cup of dates
1 tsp vanilla essence
pinch of salt
For the creamy top
1 cup of cashews soaked for at least 3 hours
1/2 cup of coconut oil
seeds of 1 vanilla bean
METHOD
Line it with greaseproof paper.
In a blender add all the ingredients for the base. Blitz until it forms a sticky mixture and all come together.
Press this down into the base of your tin using a spatula to smooth everything out.
Blend until the mixture is creamy and slightly runny.
Poor this onto the nutty base and spread evenly also.
Decorate with a vanilla bean pod and leave to chill in the freezer for 2 hours.
Serve on its own or drizzle with melted chocolate.
