These sweet potato brownie melt in the mouth as they are made incredibly moist by the sweet potato. So to find out how these chocolatey squares are made, continue reading.
- 1 medium raw sweet potato, peeled and grated (using larger holes of the greater) - this yields way more sweet potato than needed so why not try make my sweet potato cupcakes with marshmallow frosting!
- 2 whole eggs
- 2 tsp vanilla extract (the real kind)
- 1/2 cup of raw honey, melted in the microwave if it’s too thick
- Generous 1/2 cup of extra virgin olive oil
- 1 heaped tbsp of gluten free baking powder
- ½ tbsp of baking soda
- 1 cup of unsweetened cocoa powder (reduce that amount if you prefer a milder chocolate flavour)
As an extra touch (which I didn't do as I wasn't serving these straight away), its really nice to melt some dark chocolate and drizzle it over the top of the cooled brownie.
