Im not yet ready to let go of the summer salad season, so in my last hopes of holding on to the vibrant fruits that I've had filling my fridge I've come up with this beautiful, light salad. This would be a great accompaniment for some sort of fish like crab, prawns or salmon. I would also add in some avocado, I just didn't have any in my kitchen at the time. Place the mixed leaves on a large plate. Finely dice the red onion & quarter the baby tomatoes. Sprinkle the onion and tomatoes on top of the mixed leaves. Remove the skin from the papaya and roughly chop. Sprinkle the papaya on to the leaves also. Pull some mint leaves off the stalks and roughly chop them. Sprinkle over the salad. Squeeze the juice of one lime over each salad, season with salt and pepper and drizzle over a glug of olive oil. Toss everything together so it is all well coated. Enjoy!

I would also add in some avocado, I just didn't have any in my kitchen at the time.
