75g raisins
1 tsp smoked paprika
1 tsp cumin
salt & pepper
1 tbls tomato puree
1 cucumber
1 red onion
handful of cherry tomatoes
large bunch of coriander
large bunch of parsley
large bunch of mint
juice 1/2 lemon
olive oil

sliced almonds
feta cheese
Dice the cucumber, red onion and tomato. Roughly chop the herbs. Add all the vegetables and herbs to the couscous and stir everything together until well combined. Squeeze over the juice of 1/2 a lemon, pour in a generous glug of olive oil and season with salt and pepper
To serve, dish out the couscous salad, sprinkle over the diced almonds and feta cheese (optional). Serve with lemon wedges. Enjoy!
