INGREDIENTS
1 banana
4 dates
2 tbs honey
1 egg
1/2 cup almond flour
1 tsp organic vanilla essence
1 tsp baking powder
pinch of salt
pinch of cinnamon
TOPPING(optional)
60g 85% dark chocolate
1 tsp honey
pinch of salt
1tbs flaked almonds
METHOD
In a blender add the banana, dates and honey. Blend until smooth.
Then add the egg, almond flour, baking soda, vanilla, salt & cinnamon. Blend again until everything is well incorporated.
Either spray your silicon mould with non stick spray or line a tin with muffin cases.
Pour the batter into the cases/moulds and place in the oven for 20 minutes.
You know when they are done when you insert a skewer and it comes out clean.
Yummm!
Or you can leave them to cool for 20 minutes and prepare the topping.
Place the chocolate honey & salt in a ban marie to melt.
The chocolate should appear runny and shiny.
Pour a teaspoon of the chocolate on top of each muffin and sprinkle a few sliced almonds.
