PALEO, GLUTEN FREE, DAIRY FREE & VEGAN
INGREDIENTS
2 cups of boiling water
1 cup of gluten free oats
1 cup of chopped walnuts
1 vanilla pod, deseeded
2 tbs raw organic honey (or agave nectar to make this vegan)
2 tbs of raw maple syrup
generous pinch of salt
1/4 cup of melted coconut oil
1 tsp cinnamon
1 cup of mixed seeds - I used pumpkin, sun flower & pine nuts
1 cup of raisins
METHOD
In that same sauce pan add the oats, chopped walnuts, vanilla, honey, maple syrup, salt, coconut oil & cinnamon. Stir everything together until all the ingredients are well coated. Line a sheet tray with baking paper and bake in the oven at 160 degrees Celsius for 12/14 minutes. Half way through the baking, give the granola a quick toss around the tray. Keep an eye on the granola as it can quickly burn.
Allow the granola to cool and then add the raisins & seeds. Toss everything together and store in an airtight container for up to two weeks. Trust me it won't last!
