- 1 Cup of Walnuts (soaked)
- 2 Tbls of Dried Cranberries
- 2 Tbls of Honey
- 1 Tsp Vanilla
- 5 Dates (pitted)
- 2 Squares 70% Dark Chocolate
- Coarse Sea Salt
- Desiccated Coconut For the base.
Drain the water and add walnuts and cranberries to food processor, with 1 Tbls honey, pinch of salt and vanilla.
Blend until everything is well combined.
Line a dish with greese proof paper, can be any size depending on what shape your want your bars to be.
Spread mixture evenly along the base and place in freezer while preparing next layer.
For middle caramel layer:
Soak other half of walnuts in the same way.
Add dates, honey, salt, and drained soaked walnuts to blender.
Blend until mixture is smooth. Add a little water if necessary.
Take the dish out of the freezer and spread on second layer.
For the top:
Melt dark chocolate in microwave, spread evenly over top of chewy bars.
Sprinkle desiccated coconut and salt. Place back in freezer for 30 minutes.
Slice into bars & enjoy!
