INGREDIENTS
3 large tomatoes
1/2 red chilli pepper
Juice 1/2 Lime
1 clove garlic
Handful of coriander
2 tbs olive oil
Salt & pepper
Optional - 1/2 red onion
PALEO, VEGAN, GLUTEN FREE & DAIRY FREEThis super quick and easy salad is light and tasty. I found myself making it to accompany lovely white fish or to have on its own as a small lunch. With only a handful of ingredients you'll have it whipped up in minutes. INGREDIENTS1 avocado 3 large tomatoes 1/2 red chilli pepper Juice 1/2 Lime 1 clove garlic Handful of coriander 2 tbs olive oil Salt & pepper Optional - 1/2 red onion Start of by prepping the ingredients. Remove the stone from the avocado and cut in 1cm slices, doing the same with the tomatoes. Finely dice the red chilli, garlic and red onion if you are adding it. Roughly chop the coriander, leaving some for the garnish. Lay out the sliced avocado and tomato which ever way you fancy. Sprinkle over the chopped garlic and chilli and squeeze over the juice of half a lime. Scatter the chopped coriander and drizzle over a healthy glug of olive oil. Season generously with salt and pepper and you're ready to serve. Easy Peasy!
