Not only are you left feeling satisfied without having to crawl to the couch in food coma but knowing that this pizza is actually really good for you having not consumed one carb, artificial sugar, or dairy product, I have now been completely converted, and I don't think I will be looking back!
INGREDIENTS
- 1 small or 1/2 a large head of broccoli
- 1 red onion
- 1 large clove of garlic
- 2 tsp of olive oil
- 2 eggs
- Salt
- Pepper
For the tomato sauce
- 4 baby tomatoes off the vine
- 2 spring onions
- 1 clove of garlic
- 1 tin of chopped tomatoes (400g)
- Salt
- Pepper
- Mixed Herd Seasoning
These can be varied with any vegetable, meet or cheese you like.
- One large portobello mushroom
- 3 slices of Parma ham
- Parmesan Shavings
- Spinach & Rocket leaves.
METHOD
Quarter one red onion, chop florets off the broccoli and peel garlic.
Add the onion, broccoli and garlic to the food processor along with 2 eggs, olive oil, salt and pepper.
Blitz the mixture until everything is combined together. This should take about 2 minutes, but may vary depending on the blender.
Scrape down the sides every so often so that there are no large pieces left.
Lay down greece proof paper on a baking tray and spread the mixture into a disc shape.
Make sure to leave the edges a little bit thicker to ensure that they do not burn.
Cook in the oven for 15-20 minutes until the base does not appear wet. This may take more or less time depending on your oven so keep an eye on it.
Place tomatoes, spring onion, garlic clove, tin of chopped tomatoes, salt, pepper and mixed herb seasoning in your blender.
Blitz until everything is well incorporated, and the mixture is smooth.
Prepare the toppings of your choice. I chose portobello mushroom and parma ham.
Place sliced portobello mushrooms and parma ham on top. At this stage you can add mozzarella, goats cheese or cheddar. I am not a big fan of cheese so I only added 2 or 3 pieces of parmesan. To make this dairy free, leave the cheese out all together.
Season with salt and pepper, drizzle with olive oil and place back in the oven for 7-10 minutes until everything is cooked.
Drizzle with more olive oil and give the pizza one last season if you like.
Serve on a wooden board, and let every one help themselves.
