INGREDIENTS
500g of mini sweet peppers
3 tbs olive oil
large handful of spinach
1 red onion
2 spring onions
1/2 red chili
large bunch of parsley
Dressing
30ml red wine vinegar
30 ml olive oil
1 tbs honey
salt
pepper
METHOD
There is no need to use all the dressing, just enough to lightly coat the salad. Toss the salad around one final time, dish out, and enjoy!
