INGREDIENTS
1 cup of quinoa
2 1/2 cups of water
1 parsnip or carrot
3 baby radish
2 spring onions
handful of rocket leaves
1 lemon
7/8 sprigs of thyme
olive oil
salt & pepper
PALEO, GLUTEN FREE, DAIRY FREE, VEGANINGREDIENTS For two portions you will need 1 cup of quinoa 2 1/2 cups of water 1 parsnip or carrot 3 baby radish 2 spring onions handful of rocket leaves 1 lemon 7/8 sprigs of thyme olive oil salt & pepper METHOD Add the quinoa to a sauce pan with the boiling water and cook for twenty minutes over medium heat, until all the water is absorbed and the quinoa is tender. Using a speed peeler, peal the parsnip and baby radishes. Finely slice the spring onion. When the quinoa is cooked leave to cool for about five minutes before seasoning with the salt & pepper. Pick off the thyme leaves add them to the quinoa with the juice of half a lemon and a gulg of olive oil. Divide the quinoa between two plates and do the same with the vegetables & salad leaves. Toss everything together, making sure all the ingredients are coated with the lemon and olive oil. Give a final season even needs be & enjoy!

PALEO, GLUTEN FREE, DAIRY FREE, VEGAN Im not yet ready to let go of the summer salad season, so in my last hopes of holding on to the vibrant fruits that I've had filling my fridge I've come up with this beautiful, light salad. This would be a great accompaniment for some sort of fish like crab, prawns or salmon. I would also add in some avocado, I just didn't have any in my kitchen at the time. INGREDIENTSMETHOD Place the mixed leaves on a large plate. Finely dice the red onion & quarter the baby tomatoes. Sprinkle the onion and tomatoes on top of the mixed leaves. Remove the skin from the papaya and roughly chop. Sprinkle the papaya on to the leaves also. Pull some mint leaves off the stalks and roughly chop them. Sprinkle over the salad. Squeeze the juice of one lime over each salad, season with salt and pepper and drizzle over a glug of olive oil. Toss everything together so it is all well coated. Enjoy!
