GLUTEN FREE & GRAIN FREE
INGREDIENTS
2 cups of broccoli
1 ¼ cups of mozzarella
1 egg & 1 egg white
Salt & pepper
Toppings
½ a tin of tomatoes
2 tbs tomato puree
Handful of tomatoes
1 chili
½ red pepper
3 slices of Parma ham
Handful of rocket leaves
METHOD
Chop the florets off the broccoli heads and add them to a blender. Blitz away until you have a fine loose pulp mixture. Don’t over blitz or the mixture will become damp and dense.
Place the broccoli in a medium sized bowl and steam in the microwave for 4 minutes (no need to cover). After the broccoli has steamed pat it down with a piece of kitchen paper to remove any excess moisture.
Allow cool for 5 minutes before adding the other ingredients.
Add 1 cup of the mozzarella to the blender and blitz until it is a coarse sandy consistency. Add this to the broccoli with the egg, salt and pepper. Mix well.
Cover a baking tray with greaseproof and spread the broccoli base into about a 9 inch circle elevating the edges slightly.
Cook in the oven for 15 minutes, until it is golden brown.
Meanwhile prepare your toppings.
To make a simple tomato sauce, add the of tin tomatoes, tomato puree, salt and pepper to a blender and blitz until smooth.
Diced up the red pepper, tomatoes & chili.
When the base is cooked, add a thin layer of the tomato sauce, sprinkle the remainder (1/4 cup) of the mozzarella and scatter the toppings.
Cook in the oven for a further 15 minutes until the cheese has turned golden brown. Allow to sit for 5 minutes before cutting.
Dig in to your delicious pizza and wash it down with a well-deserved beer or wine of choice!
